Balsamic Chicken Strawberry Basil (Printable Version)

Tender grilled chicken served with a refreshing strawberry and basil topping bursting with bright flavors.

# Ingredients:

→ Chicken

01 - 4 boneless skinless chicken breasts, approx. 150-170g each

→ Marinade

02 - 60 ml aged balsamic vinegar
03 - 30 ml extra virgin olive oil
04 - 1 garlic clove, minced
05 - 1/2 teaspoon salt
06 - Freshly ground black pepper, to taste

→ Strawberry Basil Relish

07 - 200 g fresh strawberries, diced
08 - 30 g red onion, finely chopped
09 - 10 g fresh basil leaves, finely chopped
10 - 5 ml balsamic vinegar
11 - 15 ml honey (optional)
12 - Pinch of salt

# Steps:

01 - Whisk balsamic vinegar, olive oil, minced garlic, salt, and black pepper until emulsified. Add chicken breasts and turn several times to coat evenly. Cover and refrigerate for 20 minutes to 2 hours for optimal flavor infusion.
02 - Gently combine diced strawberries, finely chopped red onion, chopped basil, balsamic vinegar, honey (if using), and a pinch of salt in a bowl. Fold carefully to avoid crushing the berries. Cover and chill to allow flavors to meld.
03 - Preheat grill or a large skillet over medium-high heat. Remove chicken from marinade, shaking off excess. Cook undisturbed for 5 to 7 minutes per side, achieving a deep sear and caramelization. Confirm doneness by internal temperature (75°C) or clear juices.
04 - Transfer chicken to a cutting board and rest for 5 minutes to redistribute juices and retain moisture.
05 - Slice or leave chicken whole on serving plates or platter. Spoon chilled strawberry basil relish generously over the chicken. Serve immediately to enjoy the contrast of warm chicken and cool relish.

# Notes:

01 - Marinating the chicken longer intensifies flavor; resting the meat ensures juiciness. Adjust honey in relish based on strawberry sweetness.
