In a large bowl, thoroughly mash roasted sweet potatoes until smooth. Add granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, ground cinnamon, ground nutmeg, and salt. Whisk or use a hand mixer to blend until the mixture is silky and creamy.

Roll out the unbaked pie crust into a 23 cm pie dish, pressing gently to fit and crimp edges for a neat appearance.

Pour the sweet potato filling evenly into the prepared pie crust and smooth the surface with a spatula.

Bake for 55 to 60 minutes, or until the center is set and a toothpick inserted comes out clean.
