Black Folks Sweet Potato Delight (Printable Version)

# Ingredients:

01 - 460 g roasted sweet potatoes, mashed
02 - 200 g granulated sugar
03 - 110 g brown sugar
04 - 120 ml evaporated milk
05 - 115 g unsalted butter, melted
06 - 2 large eggs
07 - 5 ml vanilla extract
08 - 2.5 ml ground cinnamon
09 - 1.25 ml ground nutmeg
10 - 1.25 ml salt

11 - 1 unbaked 23 cm pie crust

# Steps:

01 - Set the oven temperature to 175°C and position the oven rack in the middle.
02 - In a large bowl, thoroughly mash roasted sweet potatoes until smooth. Add granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, ground cinnamon, ground nutmeg, and salt. Whisk or use a hand mixer to blend until the mixture is silky and creamy.
03 - Roll out the unbaked pie crust into a 23 cm pie dish, pressing gently to fit and crimp edges for a neat appearance.
04 - Pour the sweet potato filling evenly into the prepared pie crust and smooth the surface with a spatula.
05 - Bake for 55 to 60 minutes, or until the center is set and a toothpick inserted comes out clean.
06 - Allow the pie to cool on a wire rack for at least 2 hours to set completely before slicing.
07 - Slice and serve at room temperature or chilled, optionally accompanied by whipped cream or vanilla ice cream.
