No-Bake Cottage Cheese Bites (Printable Version)

Creamy no-bake bites blending cottage cheese and cocoa into protein-packed, chocolaty treats ready in minutes.

# Ingredients:

→ Dairy

01 - 240 ml cottage cheese (approx. 1 cup)

→ Sweeteners

02 - 30 ml honey or maple syrup (2 tablespoons), or alternative sweetener of choice

→ Flavorings

03 - 5 ml vanilla extract (1 teaspoon)

→ Dry Ingredients

04 - 50 g unsweetened cocoa powder (½ cup)
05 - 30 g protein powder, optional (1 scoop)

→ Mix-Ins

06 - 15 g chopped nuts or seeds (2 tablespoons)
07 - Optional: mini chocolate chips, handful

# Steps:

01 - Place cottage cheese, honey (or sweetener), and vanilla extract into a blender and blend until smooth and lump-free.
02 - Transfer the blended mixture into a bowl and stir in the cocoa powder. If using, whisk in the protein powder until thick and consistent.
03 - Fold in chopped nuts or seeds and, if desired, mini chocolate chips to the batter.
04 - Using a tablespoon or small scoop, portion out the mixture and roll each into a 2.5 cm diameter ball. Place on a parchment-lined tray.
05 - Refrigerate for at least 60 minutes or freeze for 20 minutes before transferring to the fridge. This allows bites to firm up.
06 - Keep protein bites in an airtight container refrigerated for up to 5 days, enjoying as a snack or post-workout fuel.

# Notes:

01 - Adjust cocoa or protein powder to reach desired batter texture; add a splash of almond milk if too dry.
02 - Sweetness can be modified to taste before chilling; chilling enhances firmness of bites.
03 - Freeze extras for long-term storage up to 2–3 weeks; thaw briefly at room temperature for optimal texture.
