01 -
Combine shrimp, Alfredo sauce, salt, and pepper in a large bowl. Toss thoroughly to coat all pieces evenly.
02 -
Lay each tortilla flat, place a generous portion of the shrimp mixture in the center, then sprinkle shredded mozzarella over the filling. Fold in the sides and roll tightly from the bottom to enclose the filling fully.
03 -
Set beaten eggs in one shallow dish and breadcrumbs in another. Dip each wrapped burrito into the egg wash to coat completely, then roll in breadcrumbs, pressing gently to ensure even coverage.
04 -
Pour oil into a deep pot to a depth of approximately 5 centimeters and heat over medium heat until it reaches 190°C.
05 -
Carefully add a few burritos at a time without crowding. Fry, turning occasionally, for 3 to 4 minutes until all sides are golden brown and crispy.
06 -
Remove burritos using tongs and set on paper towels to absorb excess oil. Serve immediately with extra Alfredo sauce for dipping if desired.
