# Ingredients:

→ Poultry

01 - 450 grams boneless skinless chicken breasts, halved lengthwise and pounded to 1.3 cm thickness

→ Seasonings

02 - Salt, to taste
03 - Black pepper, freshly ground, to taste
04 - 1 teaspoon dried parsley
05 - 1 teaspoon mustard powder
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon dried basil
08 - 1/4 teaspoon onion powder
09 - 1 teaspoon honey

→ Sauce components

10 - 2 tablespoons olive oil
11 - 4 cloves garlic, minced
12 - 120 milliliters dry white wine (e.g., Pinot Grigio, Chardonnay)
13 - 30 grams unsalted butter
14 - 15 grams all-purpose flour
15 - 240 milliliters low-sodium chicken broth
16 - 60 milliliters heavy cream
17 - 60 grams freshly grated Parmesan cheese
18 - 1 teaspoon Worcestershire sauce
19 - 1 tablespoon fresh lemon juice

# Steps:

01 - Halve the chicken breasts lengthwise, cover with plastic wrap, and pound to an even 1.3 cm thickness using the textured side of a mallet for uniform cooking.
02 - Season both sides with salt, pepper, and dried parsley. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4 to 5 minutes per side until golden brown. Remove and set aside.
03 - Reduce heat to medium, pour in white wine, and scrape browned bits from the skillet's bottom with a spatula. Allow wine to bubble and reduce for 2 minutes. Add minced garlic and cook for an additional 2 to 3 minutes until fragrant and slightly reduced.
04 - Add butter to skillet and let melt. Sprinkle flour over melted butter and stir constantly for 1 to 2 minutes to eliminate raw flour taste.
05 - Gradually pour in chicken broth, heavy cream, Worcestershire sauce, mustard powder, honey, oregano, basil, and onion powder while stirring continuously. Bring to a boil, then reduce heat and simmer for 8 minutes until sauce thickens slightly.
06 - Lower heat and slowly incorporate freshly grated Parmesan cheese, stirring until melted and smooth. Finish by stirring in fresh lemon juice for brightness.
07 - Return chicken breasts to skillet, spoon sauce over top, and heat on low for 5 minutes to warm through. Garnish with fresh parsley if desired and serve immediately.

# Notes:

01 - Grate Parmesan cheese fresh from a block for optimal melt and rich flavor.
02 - Allow garlic to cook gently to develop sweetness without bitterness.
03 - Use a large, wide skillet to give the sauce room to reduce evenly.
04 - Store leftovers in a sealed container in the refrigerator for up to three days or freeze for longer storage.
