Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and sauté for 8 to 10 minutes, stirring frequently until tender and beginning to brown.

Push sweet potatoes to one side of the skillet. Add ground beef to the empty space, break up with a spatula, and cook for 5 minutes until no pink remains and beef is browned.

Add diced onion and sliced zucchini to the pan. Stir and cook for 4 to 5 minutes until onions are translucent and zucchini is just tender.

Sprinkle paprika, cumin, chili powder, salt, and pepper over the ingredients. Stir well and cook for 1 to 2 minutes to develop the spices' aroma.

Turn off heat, toss skillet contents to combine evenly. Taste and adjust seasoning. Sprinkle with fresh parsley and serve immediately.
