Mediterranean Chicken Patties (Printable Version)

Juicy chicken patties blending fresh herbs and spices for a healthy, aromatic Mediterranean flavor.

# Ingredients:

→ Base

01 - 450 g ground chicken
02 - 1 medium onion, finely chopped
03 - 1 tbsp finely chopped garlic
04 - 1 cup chopped baby spinach (approximately 30 g)
05 - 120 ml breadcrumbs
06 - 60 ml Greek yogurt

→ Herbs & Spices

07 - 2 tbsp fresh dill, finely chopped
08 - 1 tbsp fresh lemon juice
09 - 1 tsp dried oregano
10 - ½ tsp sweet paprika
11 - ½ tsp ground cumin
12 - ½ tsp salt
13 - ¼ tsp freshly ground black pepper

→ For Frying

14 - 45 ml extra virgin olive oil

# Steps:

01 - Heat 15 ml olive oil in a skillet over medium heat. Add chopped onion and sauté for 5 minutes until translucent and lightly golden. Stir in garlic and cook for 30 seconds without browning. Remove from heat and allow to cool.
02 - In a large bowl, mix cooled onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, fresh dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Mix gently until evenly combined without overworking.
03 - Moisten hands with cold water and form the mixture into 8 patties approximately 1.2 cm thick to ensure even cooking. If mixture sticks, continue rinsing hands.
04 - Heat remaining 30 ml olive oil in the skillet over medium heat. Place patties with space between them and fry for 5–6 minutes per side until golden brown and cooked through (internal temperature 74°C). Drain on paper towels to remove excess oil.

# Notes:

01 - For optimal flavor, prepare the mixture a day ahead and refrigerate to allow herbs and spices to meld.
02 - Ensure internal temperature reaches 74°C for food safety.
03 - If mixture is too wet, add additional breadcrumbs; if too dry, add a tablespoon of Greek yogurt.
