# Ingredients:

01 - 500 g ground beef (80/20 fat ratio)

→ Seasoning

02 - 5 g kosher salt
03 - 2 g freshly ground black pepper

→ Cooking fat

04 - 15 g unsalted butter

→ Buns

05 - 4 quality burger buns

# Steps:

01 - Keep the ground beef cold before handling. Divide into four equal portions without compressing. Form each portion gently into patties using light pressure, making each patty slightly larger than the buns to compensate for shrinkage. Create a small dimple in the center of each patty to prevent puffing during cooking.
02 - Season both sides of the patties generously with kosher salt and freshly ground black pepper just before cooking, ensuring even distribution by seasoning from a height.
03 - Heat a skillet or grill pan over medium-high heat until fully hot to ensure proper crust formation on the patties.
04 - Add unsalted butter to the pan and melt. Place patties in the pan and allow a crust to develop without pressing down. Flip the patties only once, cooking each side until desired doneness is reached. Use a meat thermometer to ensure internal temperature accuracy.
05 - Remove patties from heat and let them rest for several minutes to allow juices to redistribute.
06 - Warm the burger buns lightly in the pan or oven just before serving to enhance texture and flavor.
