Juicy Wagyu steak and succulent prawns layered on creamy parmesan spaghetti with aromatic herbs and a hint of chili.

# Ingredients:

→ Meat

01 - Two 200g Wagyu sirloin steaks, well-marbled

→ Seafood

02 - Six extra-large raw king prawns, peeled and deveined

→ Pasta

03 - 200g durum wheat spaghetti

→ Dairy

04 - 60ml unsalted butter
05 - 150ml double cream
06 - 50g freshly grated Parmesan cheese

07 - 1 medium brown onion, finely diced
08 - 4 garlic cloves, 2 crushed, 2 finely chopped
09 - 2 fresh thyme sprigs
10 - 10g fresh flat-leaf parsley, chopped

→ Spices and Seasonings

11 - Freshly ground black pepper, to taste
12 - Sea salt, to taste
13 - Chili flakes, mild or hot, 1 tsp

# Steps:

01 - Season Wagyu sirloin steaks generously with sea salt and freshly ground black pepper on all sides. Allow to rest at room temperature for 30 minutes to ensure even cooking.
02 - Preheat a cast iron skillet until very hot. Place steaks in the pan without moving for 2 minutes to develop a crust, then flip and sear the other side for 2 minutes.
03 - Add butter, crushed garlic, and thyme sprigs to the skillet. Tilt pan and spoon melted butter over steaks continuously for approximately 4 minutes per side to infuse flavor and achieve a glossy finish.
04 - Remove steaks from skillet, place on a plate, and tent loosely with foil. Rest for at least 10 minutes to allow juices to redistribute.
05 - In the same skillet, arrange prawns in a single layer and cook for 2-3 minutes per side until opaque and pink. Avoid overcooking to maintain tenderness. Remove and set aside.
06 - If needed, melt additional butter in the skillet. Add diced onion and cook over medium-low heat for 5 minutes until soft and golden. Stir in finely chopped garlic and cook until fragrant. Pour in double cream, then add Parmesan cheese and chili flakes. Whisk gently until sauce is smooth, creamy, and slightly thickened.
07 - Boil spaghetti in a large pot of salted water until al dente according to package instructions. Drain and reserve some cooking water.
08 - Add drained spaghetti to the cream sauce, tossing thoroughly to coat every strand. Incorporate a splash of reserved pasta water to achieve a silkier texture if necessary. Fold in cooked prawns and toss gently.
09 - Slice rested steaks against the grain into thin strips. Plate pasta in shallow bowls, arrange steak slices on top, garnish with chopped fresh parsley and additional Parmesan cheese as desired.
