Whisk sesame oil, soy sauce, rice vinegar, minced garlic, ginger, and vegetable oil together until combined. Divide mixture evenly into two bowls. Add chicken pieces to one bowl and broccoli florets to the other. Let both marinate briefly for 5 minutes.

Preheat the air fryer to 193°C (380°F) for 2 minutes. Lightly spray the basket with cooking oil to prevent sticking.

Arrange marinated chicken pieces in a single layer in the air fryer basket. Cook for 10 minutes at 193°C, stirring halfway through for even browning.

Add the marinated broccoli florets to the basket with the chicken. Continue cooking for an additional 10 to 11 minutes at 193°C until chicken reaches an internal temperature of 75°C and broccoli is crisp-tender.

Remove from the air fryer and transfer to serving dishes. Serve alongside steamed jasmine rice, brown rice, or cauliflower rice as desired.
