Bacon Wrapped Filet Mignon (Printable Version)

Juicy filet mignon wrapped in smoky bacon, seared and oven-finished for an impressive main dish.

# Ingredients:

01 - 2 filet mignon steaks (170-225 g each)
02 - 4 slices of bacon

→ Seasonings and Garnishes

03 - Salt, to taste
04 - Freshly ground black pepper, to taste
05 - Olive oil, as needed
06 - Fresh rosemary or thyme, for garnish (optional)

# Steps:

01 - Heat the oven to 200°C.
02 - Blot filet mignon steaks with paper towels to remove surface moisture.
03 - Generously season both sides of the steaks with salt and freshly ground black pepper.
04 - Wrap each filet mignon with two slices of bacon around the sides, securing with toothpicks if necessary.
05 - Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the bacon-wrapped steaks.
06 - Sear the steaks for 3-4 minutes on one side until the bacon is golden brown and crisp. Flip and repeat on the other side for 3-4 minutes.
07 - Transfer the skillet to the preheated oven and roast for 6-10 minutes until the desired doneness is reached. For rare: 49°C, medium-rare: 57°C, medium: 63°C internal temperature.
08 - Remove skillet from oven and allow the steaks to rest for 5 minutes so juices redistribute evenly.
09 - Optionally, garnish with fresh rosemary or thyme before serving.
10 - Slice and serve immediately with your choice of accompaniments.
