Preheat the oven to 200°C. Line a large baking sheet with parchment paper and set aside.

In a large skillet over medium heat, cook and crumble the ground beef until browned and fully cooked. Drain excess fat and return beef to skillet.

Stir in taco seasoning and salsa, mixing thoroughly to combine. Cook for 2–3 minutes until warmed through.

Microwave corn tortillas for 20–30 seconds to soften. Arrange them on the prepared baking sheet.

Place approximately 60 millilitres of beef filling on one half of each tortilla. Sprinkle evenly with shredded cheddar. Fold tortillas gently over the filling to form tacos.

Lightly spray the folded tacos with avocado oil spray or cooking oil spray. Bake for 10–12 minutes until tacos are golden and crisp at the edges.

Let tacos cool several minutes. Carefully open each taco and top with lettuce, tomatoes, sour cream, and olives as desired. Serve immediately.
