In a large bowl, combine the brownie mix with eggs, vegetable oil, and water following package or homemade recipe instructions. Stir until smooth.

Pour the batter evenly into the prepared tray and bake for 18 to 20 minutes or until a toothpick inserted in the center comes out with moist crumbs.

Allow brownies to cool completely in the pan, then place in the freezer for 15 minutes to firm up for slicing.

Remove brownies from the pan and cut into 10 to 12 evenly sized rectangles or squares.

If not already softened, gently soften vanilla ice cream. Optional: stir in vanilla extract for enhanced flavor.

Spoon approximately 80 ml (1/3 cup) of softened ice cream onto one brownie piece. Press another brownie piece firmly on top to form a sandwich.
