Brownie Ice Cream Sandwich (Printable Version)

Chewy brownies paired with smooth vanilla ice cream create an irresistible cool and rich dessert.

# Ingredients:

→ Brownie Base

01 - 1 box fudgy brownie mix or equivalent homemade batter
02 - 2 large eggs
03 - 120 ml vegetable oil
04 - 60 ml water

→ Ice Cream Filling

05 - 1.5 litres vanilla ice cream, softened slightly
06 - 5 ml pure vanilla extract (optional)

→ Optional Coatings

07 - Mini chocolate chips, rainbow sprinkles, or crushed nuts for sandwich edges

# Steps:

01 - Preheat the oven to 175°C. Line a 23 x 33 cm baking tray with parchment paper.
02 - In a large bowl, combine the brownie mix with eggs, vegetable oil, and water following package or homemade recipe instructions. Stir until smooth.
03 - Pour the batter evenly into the prepared tray and bake for 18 to 20 minutes or until a toothpick inserted in the center comes out with moist crumbs.
04 - Allow brownies to cool completely in the pan, then place in the freezer for 15 minutes to firm up for slicing.
05 - Remove brownies from the pan and cut into 10 to 12 evenly sized rectangles or squares.
06 - If not already softened, gently soften vanilla ice cream. Optional: stir in vanilla extract for enhanced flavor.
07 - Spoon approximately 80 ml (1/3 cup) of softened ice cream onto one brownie piece. Press another brownie piece firmly on top to form a sandwich.
08 - Smooth edges with a spatula or knife. Roll sandwich edges in mini chocolate chips, sprinkles, or nuts if desired.
09 - Place assembled sandwiches on parchment-lined tray and freeze for 1 to 2 hours until firm.
10 - Serve directly from freezer or wrap individually in plastic wrap to store for later enjoyment.
