# Ingredients:

→ Sushi Rice

01 - 2 cups Calrose sushi rice (Japanese short or medium grain)
02 - 2 cups cold water
03 - 5 tablespoons sushi vinegar (seasoned rice vinegar)

→ Bowls Assembly

04 - 225 grams imitation crab meat, flake-style, chopped
05 - 1 sheet nori seaweed, chopped
06 - 1 large avocado, diced
07 - 0.5 English cucumber, sliced
08 - 1 jalapeño, finely diced (optional)
09 - 0.25 cup chives, finely chopped (optional)

→ Garnishes and Sauces

10 - Soy sauce, regular or low sodium, to taste
11 - Wasabi paste, as desired
12 - Spicy mayo (mix 0.25 cup mayonnaise with 1 tablespoon sriracha sauce)
13 - Pickled sushi ginger (optional)
14 - Toasted sesame seeds, white or black

# Steps:

01 - Place rice into a colander and rinse thoroughly under cold water until water runs clear. Drain well, then transfer to a large heavy saucepan and add 2 cups of cold water.
02 - Set the pan over medium-high heat and bring to a boil. Reduce heat to the lowest setting, cover, and simmer until all water is absorbed, about 15 minutes. Remove from heat and let rest covered for another 15 minutes.
03 - Transfer cooked rice to a large bowl, separate any clumps, and drizzle with sushi vinegar. Use a rice paddle to slice and fold the vinegar into the rice. Mix until just warm, then cover with a damp towel and let cool to room temperature.
04 - Divide rice into 4-5 serving bowls. Arrange chopped imitation crab, sliced cucumber, diced avocado, chopped nori, jalapeño, and chives over the rice.
05 - Combine mayonnaise and sriracha to create spicy mayo. Drizzle spicy mayo and soy sauce over the bowls and sprinkle with toasted sesame seeds.
06 - Present bowls with wasabi paste and pickled sushi ginger on the side. Offer additional soy sauce for seasoning.

01 - You can prepare homemade sushi vinegar by heating 4 tablespoons rice vinegar, 2 tablespoons sugar, and 2 teaspoons fine sea salt on low heat until dissolved, then cool before use.
