Chutney Grilled Cheese (Printable Version)

A vibrant grilled sandwich with coriander chutney, melty cheese, and a golden crisp crust ready in 20 minutes.

# Ingredients:

→ Chutney

01 - Fresh coriander leaves, vibrant green, without yellow spots, 30 g
02 - Garlic cloves, firm, 2 cloves
03 - Fresh ginger, plump pieces, 10 g
04 - Green chillies, adjusted for spice tolerance, 1-2 pieces
05 - Freshly squeezed lemon juice, 15 ml
06 - Chaat masala powder, 1/2 tsp (2 g)
07 - Salt, to taste
08 - Ice cubes, 2 pieces
09 - Bread slice (for thickening chutney), 1 slice

→ Sandwich Assembly

10 - Butter, unsalted, softened, 20 g
11 - White or whole wheat bread slices, sturdy crumb, 4 slices
12 - Cheese slices of choice, 2 slices
13 - Freshly grated mozzarella cheese, 50 g

# Steps:

01 - Combine coriander leaves, garlic, ginger, green chillies, lemon juice, chaat masala, salt, ice cubes, and one bread slice in a grinder jar. Add minimal water only if necessary. Blend until smooth and thick to ensure chutney adheres well to bread.
02 - Spread a generous layer of softened butter evenly on one side of each bread slice.
03 - On the unbuttered side of two bread slices, spread a thick, even layer of freshly prepared green chutney.
04 - Place one slice of cheese on top of the chutney on each bread slice. Evenly sprinkle grated mozzarella over the cheese slices for enhanced gooey texture.
05 - Cover each cheese layer with the remaining bread slices, buttered side facing outward and chutney side inward. Press gently to secure all components together.
06 - Lightly spread butter on the top slice of each sandwich to promote golden, crisp grilling.
07 - Heat a non-stick pan over medium-low heat. Place sandwiches butter side down. Cook slowly until the bottom is golden brown and crispy, about 3-4 minutes. Flip and grill the other side until equally golden and cheese is melted, pressing gently with a spatula for even crispness.
08 - Transfer sandwiches to a serving plate. Slice in half while cheese remains stretchy and serve immediately for optimal flavor and texture.
