Citrus Dijon Grilled Chicken (Printable Version)

# Ingredients:

01 - 4 boneless skinless chicken breasts

→ Marinade

02 - ½ cup olive oil
03 - 2 tablespoons dijon mustard
04 - juice of 1 lime
05 - juice of 1 lemon
06 - juice of 2 oranges
07 - 1 teaspoon salt
08 - 1 teaspoon garlic powder
09 - 1 teaspoon Italian seasoning or Herbs de Provence
10 - 1 teaspoon fresh thyme, finely chopped (or additional 1/4 teaspoon dried herbs)
11 - 1 teaspoon fresh oregano, finely chopped (or additional 1/4 teaspoon dried herbs)
12 - ¼ teaspoon crushed red pepper flakes

# Steps:

01 - Combine all marinade ingredients and whisk vigorously to combine, or mix in a jar, cover and shake well. Reserve 1/4 cup of the marinade and set aside.
02 - In a bowl or large zip-close bag, combine chicken and marinade (excluding reserved portion). Toss to coat well, then refrigerate for 1 hour or up to overnight.
03 - When ready to cook, preheat grill to medium and oil the grates.
04 - Place chicken on the grill. Cook for 5-7 minutes on one side, then turn and brush half of the reserved marinade on the tops of all the chicken.
05 - Cook for 5-7 minutes more on the other side. Turn again and brush the remaining marinade over the chicken. Cook for an additional 2-4 minutes or until chicken is cooked through and juices run clear.
06 - Serve immediately and garnish with fresh herbs and lemon, lime, or orange wedges for squeezing. Enjoy!

01 - You can marinate the chicken for as little as 30 minutes, though 1-12 hours is recommended for the best flavor.
02 - Feel free to substitute one type of citrus for another if needed. Using all lemon or all lime works well.
