Copycat Arby’s Beef Cheddar (Printable Version)

# Ingredients:

→ Arbys Sauce

01 - 60 ml ketchup (preferably corn syrup-free)
02 - 25 g light brown sugar, finely packed
03 - 15 ml apple cider vinegar, unfiltered
04 - 5 ml Worcestershire sauce
05 - 1 g garlic powder
06 - 1 g onion powder

→ Cheese Sauce

07 - 30 g unsalted butter
08 - 15 g all purpose flour
09 - 240 ml whole milk
10 - 120 g sharp cheddar cheese, shredded

→ Roast Beef

11 - 480 ml low sodium beef broth
12 - 400 g thinly sliced deli roast beef

→ Assembly

13 - 4 onion hamburger buns, fresh

# Steps:

01 - Combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, and onion powder in a small bowl. Whisk until smooth and set aside to let the flavors meld.
02 - Melt butter in a small saucepan over medium heat until foaming. Stir in flour and cook constantly for 1 minute. Gradually whisk in milk to avoid lumps. Bring to a gentle simmer and whisk continuously for 5 minutes until thickened. Remove from heat and stir in shredded cheddar until melted and glossy. Keep warm.
03 - Simmer beef broth in a large skillet over medium heat for 5 minutes. Add slices of roast beef one at a time to the broth, separating them for even warming. Heat for 1-2 minutes until warmed through.
04 - Spread a generous layer of Arbys sauce on the bottom half of each toasted onion bun. Add a pile of warm roast beef, then spoon hot cheese sauce over the meat. Top with the bun’s upper half and serve immediately.

01 - For tender roast beef, warm slices gently in simmering broth no longer than 2 minutes to maintain juiciness.
02 - Shred cheddar cheese fresh from a block to ensure a smooth and creamy cheese sauce.
03 - Assemble sandwiches immediately before serving to prevent buns from becoming soggy.
