Crispy Air Fryer Cod (Printable Version)

# Ingredients:

01 - 450 grams cod fillets

→ Breading

02 - 2 large eggs
03 - 60 grams all-purpose flour
04 - 100 grams panko breadcrumbs or regular breadcrumbs
05 - 2 teaspoons Old Bay seasoning
06 - 3 teaspoons Italian seasoning
07 - 1 teaspoon garlic powder
08 - 0.25 teaspoon cayenne pepper
09 - 0.5 teaspoon fine sea salt
10 - 0.125 teaspoon ground black pepper

# Steps:

01 - Set the air fryer to 200°C and allow it to preheat thoroughly.
02 - Pat cod fillets dry using paper towels and place on a cutting board. Cut into desired portions or leave whole.
03 - Arrange three shallow bowls. Whisk the eggs in the first bowl. Place flour in the second bowl. Combine breadcrumbs, Old Bay seasoning, Italian seasoning, garlic powder, cayenne pepper, salt, and black pepper in the third bowl, mixing well.
04 - Dredge each cod piece in flour, ensuring an even layer. Next, dip into beaten eggs to coat both sides. Press both sides firmly into the seasoned breadcrumb mixture.
05 - Spray air fryer basket with non-stick spray. Arrange cod pieces in a single layer, working in batches if necessary. Cook at 200°C for 10 minutes. Gently turn the cod and continue cooking for an additional 4–5 minutes, or until a food thermometer reads 63°C at the thickest part.
06 - Optionally sprinkle additional Old Bay or Italian seasoning over the cooked cod before serving. Serve as desired, such as in tacos, on sandwiches, or with preferred sides.

# Notes:

01 - Regular breadcrumbs may be substituted for panko for a different texture.
02 - Incorporate 50 grams grated Parmesan cheese into the breadcrumb mix for enhanced flavor, if desired.
03 - Adjust cooking time for thicker portions or increased quantities; ensure internal temperature reaches 63°C.
