Preheat the oven to 150°C (300°F, or 135°C for convection). Line a baking sheet with foil and fit with an oven-safe wire rack. Lightly brush or spray the rack with oil to prevent sticking.

Thoroughly pat the turkey wing pieces dry with paper towels and place them in a large mixing bowl.

Combine the baking powder and salt in a small bowl. Sprinkle the mixture evenly over the wings and toss to coat lightly and uniformly.

Arrange the seasoned wings in a single layer on the prepared rack. Bake at 150°C for 20 minutes.

Without removing the wings, raise the oven temperature to 230°C (450°F, or 220°C convection).

Roast the wings for 30 minutes. Flip each piece and continue roasting for an additional 20–30 minutes until the skin is deeply golden and crisp. Adjust timing based on wing size and desired level of crispiness.

Remove wings from the oven and let rest for 5 minutes before serving. Toss with your preferred sauce or enjoy as-is with classic accompaniments.
