Garlic Butter Steak Lightning Noodles (Printable Version)

# Ingredients:

→ For the Steak

01 - 450 g ribeye or strip steak
02 - Sea salt, to taste
03 - Freshly ground black pepper, to taste
04 - 15 ml olive oil
05 - 15 g unsalted butter

→ For the Garlic Butter Noodles

06 - 225 g linguine or spaghetti
07 - 60 g unsalted butter
08 - 5 cloves garlic, finely grated or minced
09 - 60 ml reserved pasta water
10 - 5 ml lemon juice (optional)
11 - 2.5 ml crushed red pepper flakes (optional)
12 - 8 g chopped fresh parsley
13 - Sea salt, to taste
14 - Freshly ground black pepper, to taste
15 - Grated Parmesan or Pecorino Romano, for serving (optional)

→ Optional Garnish

16 - Toasted sesame seeds
17 - Extra chopped fresh parsley
18 - Drizzle of garlic butter from pan

# Steps:

01 - Bring a large pot of salted water to a boil. Cook the linguine or spaghetti until just shy of al dente. Reserve 60 ml of pasta water and drain.
02 - Season the steak with salt and freshly ground black pepper. Allow it to rest at room temperature for 20–30 minutes.
03 - Heat a cast iron skillet over high heat. Add olive oil and sear the steak for 3–4 minutes on each side. Add butter and baste the steak for 1 minute. Remove from the pan and let it rest for 5–10 minutes.
04 - Reduce the heat to medium in the same pan. Add butter and garlic, sauté until golden and fragrant.
05 - Deglaze with reserved pasta water, add lemon juice and crushed red pepper flakes if using. Stir to emulsify.
06 - Add cooked noodles to the sauce. Toss thoroughly. Fold in chopped parsley and season with salt and pepper.
07 - Slice the rested steak against the grain into thin strips.
08 - Arrange noodles on a plate and layer with sliced steak. Garnish with toasted sesame seeds, extra parsley, and grated cheese if desired. Drizzle any remaining garlic butter from the pan before serving.
