Gluten Free Hamburger Helper (Printable Version)

Hearty gluten free one-pot dinner with ground beef, cheddar, and pasta. Made in 30 minutes using everyday pantry staples.

# Ingredients:

→ Base

01 - 2 tablespoons unsalted butter
02 - 1 medium yellow onion, diced
03 - 1 tablespoon garlic, minced
04 - 1 pound (450 g) ground beef
05 - 3 tablespoons tomato paste
06 - 3 cups (720 ml) low sodium beef broth
07 - 1 cup (240 ml) plain unsweetened almond milk
08 - 10 ounces (285 g) gluten free pasta

→ Seasonings

09 - 1 ½ teaspoons salt
10 - ½ teaspoon ground black pepper
11 - ¾ teaspoon chili powder
12 - ¾ teaspoon paprika

→ Finishing

13 - 1 ½ cups (150 g) cheddar cheese, shredded
14 - Chives, finely sliced, for garnish
15 - Red pepper flakes, for garnish

# Steps:

01 - Heat a large pan or Dutch oven over medium heat and add the butter. Once melted, add the diced onion and sauté for 5–7 minutes until translucent.
02 - Add the minced garlic and ground beef. Cook, breaking up the meat, until nearly cooked through with a slight pink remaining.
03 - Stir in the tomato paste and cook for 1–2 minutes to concentrate the flavors.
04 - Add the beef broth, almond milk, gluten free pasta, salt, black pepper, chili powder, and paprika. Stir well to combine.
05 - Bring the mixture to a gentle boil, then reduce heat to low. Simmer uncovered for approximately 10 minutes, stirring every couple of minutes, until pasta is al dente and most of the liquid is absorbed.
06 - Stir in the shredded cheddar cheese until fully melted. Serve hot, garnished with chives and a sprinkle of red pepper flakes.

# Notes:

01 - For a smokier flavor, substitute smoked paprika for sweet paprika.
