Authentic Greek Chicken Souvlaki (Printable Version)

# Ingredients:

→ For the Souvlaki

01 - 680 g boneless, skinless chicken breasts, cut into 2.5 cm chunks
02 - 60 ml extra virgin olive oil
03 - 60 ml freshly squeezed lemon juice
04 - 4 garlic cloves, finely minced
05 - 1 tablespoon dried oregano
06 - 1 teaspoon dried thyme
07 - Salt, to taste
08 - Fresh ground black pepper, to taste
09 - 1 medium red onion, cut into 2.5 cm pieces
10 - 1 large red bell pepper, cut into 2.5 cm chunks
11 - 1 large green bell pepper, cut into 2.5 cm chunks

→ For Assembly

12 - Wooden skewers, soaked in water for 30 minutes

# Steps:

01 - In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk until fully blended.
02 - Add chicken chunks to the bowl and toss thoroughly to coat all pieces. Cover and refrigerate for at least 1 hour or up to overnight for deepest flavor.
03 - Set grill to medium-high heat in preparation for cooking.
04 - Thread marinated chicken onto soaked wooden skewers, alternating with pieces of red onion, red bell pepper, and green bell pepper.
05 - Grill the assembled skewers for 8 to 10 minutes, turning occasionally, until the chicken is fully cooked and vegetables are lightly charred and tender.
06 - Remove souvlaki from the grill and serve immediately alongside warm pita and tzatziki sauce, if desired.
