Herb & Cheese Quick Bread (Printable Version)

Golden cheddar bread with fresh herbs offers rich, savory flavor and a tender crumb ideal alongside soups and stews.

# Ingredients:

→ Dry Ingredients

01 - 250 grams all-purpose flour
02 - 15 grams granulated sugar
03 - 10 grams baking powder
04 - 5 grams kosher salt

→ Flavorings

05 - 100 grams sharp aged cheddar cheese, shredded
06 - 15 grams fresh parsley, chopped
07 - 10 grams fresh thyme leaves
08 - 5 grams fresh rosemary needles, finely chopped

→ Wet Ingredients

09 - 240 milliliters whole milk, room temperature
10 - 57 grams unsalted butter, melted and cooled
11 - 2 large eggs, room temperature

# Steps:

01 - Preheat oven to 175°C ensuring full temperature before baking. Thoroughly grease a 23x13 cm loaf pan and dust lightly with flour to prevent sticking.
02 - In a large bowl, whisk together all-purpose flour, sugar, baking powder, and salt until evenly mixed and aerated.
03 - Fold shredded cheddar and chopped fresh herbs into the dry mixture, tossing to coat with flour to prevent sinking during baking.
04 - In a separate bowl, whisk together whole milk, melted butter, and eggs until homogeneous and slightly frothy, ensuring butter is not hot to avoid cooking eggs.
05 - Fold wet ingredients into dry mixture gently, mixing just until no dry flour remains to avoid overdevelopment of gluten and toughness.
06 - Pour batter into prepared loaf pan, smoothing the surface evenly. Bake on center rack for 45 to 50 minutes until golden brown and a toothpick inserted in the center emerges clean or with few moist crumbs.
07 - Allow bread to rest in pan for 10 minutes to set structure, then transfer to wire rack to cool fully before slicing to prevent gummy texture.

# Notes:

01 - Use room temperature eggs and milk for optimal texture and rise.
02 - Brush the top with beaten egg before baking to achieve a glossy crust.
03 - The bread can be frozen for up to 3 months if sliced and properly wrapped.
