Pat the mahi mahi fillets dry with paper towels. Season both sides evenly with salt and lemon pepper.

Slice the lemon into thin rounds, squeeze juice from the remaining lemon. Mince the garlic and finely chop the parsley.

Heat olive oil in a skillet over medium-high heat until shimmering. Sear the fillets skin side down first for approximately 4 minutes until golden, then flip and cook an additional 2 to 4 minutes until the internal temperature reaches 57°C (137°F) and the flesh flakes easily.

In the same skillet, add butter, lemon juice, lemon slices, and garlic. Cook gently until fragrant. Stir in parsley and capers to combine.

Spoon the lemon garlic butter sauce over the seared fish fillets and serve immediately while warm.
