03 - 1 teaspoon lemon pepper

→ Cooking Fats

04 - 2 tablespoons olive oil
05 - 3 tablespoons unsalted butter

→ Aromatics & Herbs

06 - 4 garlic cloves, finely chopped
07 - 1 fresh lemon, juice and thin slices
08 - 2 tablespoons fresh parsley, finely chopped

→ Garnish

09 - 1 tablespoon capers

# Steps:

01 - Pat the mahi mahi fillets dry with paper towels. Season both sides evenly with salt and lemon pepper.
02 - Slice the lemon into thin rounds, squeeze juice from the remaining lemon. Mince the garlic and finely chop the parsley.
03 - Heat olive oil in a skillet over medium-high heat until shimmering. Sear the fillets skin side down first for approximately 4 minutes until golden, then flip and cook an additional 2 to 4 minutes until the internal temperature reaches 57°C (137°F) and the flesh flakes easily.
04 - In the same skillet, add butter, lemon juice, lemon slices, and garlic. Cook gently until fragrant. Stir in parsley and capers to combine.
05 - Spoon the lemon garlic butter sauce over the seared fish fillets and serve immediately while warm.

# Notes:

01 - Ensure fish is dried thoroughly for a crisp sear. Use sustainably sourced mahi mahi when possible.
