Mediterranean Spinach Feta Quesadillas (Printable Version)

# Ingredients:

→ Filling

01 - 1 medium tomato, diced (grape, cherry or plum recommended)
02 - 33 grams red onion, diced (approximately 1/3 cup)
03 - 30 grams fresh spinach, chopped (approximately 1 cup)
04 - 75 grams feta cheese, crumbled (approximately 1/2 cup)
05 - 110 grams mozzarella cheese, shredded (approximately 1 cup)

→ Base

06 - 3 large burrito-style flour tortillas

# Steps:

01 - In a mixing bowl, combine diced tomato, red onion, chopped spinach, crumbled feta cheese, and shredded mozzarella cheese until evenly mixed.
02 - Distribute one third of the filling mixture over half of each tortilla. Fold the empty half over the filling to create a semicircle.
03 - Heat a small amount of oil in a large flat pan or griddle over medium heat. Place the folded tortillas onto the pan and cook for 3 to 4 minutes per side, pressing gently with a spatula, until both sides are lightly browned and cheese is fully melted.
04 - Cut each quesadilla into 4 wedges and serve immediately with desired accompaniments such as salsa, sour cream, or pico de gallo.

01 - For a sweeter flavour, use grape or cherry tomatoes. For optimal crispiness, avoid overfilling the tortillas.
