Mediterranean Spinach Feta Quesadillas (Printable Version)

Savory tortillas filled with spinach, two cheeses, and red onion for a Mediterranean twist on a classic favorite.

# Ingredients:

01 - 4 flour tortillas
02 - 1 cup fresh spinach, chopped
03 - ½ cup shredded mozzarella cheese
04 - ½ cup crumbled feta cheese
05 - 1 small tomato, diced
06 - ¼ cup red onion, thinly sliced
07 - ¼ teaspoon black pepper
08 - 1 tablespoon olive oil, for frying

# Steps:

01 - In a mixing bowl, combine mozzarella, feta, spinach, tomatoes, red onion, and black pepper. Stir until well mixed.
02 - Lay one tortilla flat. Place one-fourth of the filling mixture onto half of the tortilla. Fold the tortilla over to cover the filling.
03 - Heat a large skillet or griddle over medium heat. Add olive oil and heat. Place the filled tortilla in the pan and cook for 3-4 minutes per side, pressing gently with a spatula to ensure even melting and browning.
04 - Remove from heat, let it cool slightly, then slice into wedges and serve.

# Notes:

01 - For a gluten-free version, swap flour tortillas with corn or gluten-free wraps.
02 - For a vegan option, use plant-based mozzarella and feta cheese alternatives.
03 - Feel free to add extra veggies like mushrooms, olives, or bell peppers for more flavor and nutrition.
04 - To spice things up, add red pepper flakes or jalapeños.
