In a mixing bowl, combine mozzarella, feta, spinach, tomatoes, red onion, and black pepper. Stir until well mixed.

Lay one tortilla flat. Place one-fourth of the filling mixture onto half of the tortilla. Fold the tortilla over to cover the filling.

Heat a large skillet or griddle over medium heat. Add olive oil and heat. Place the filled tortilla in the pan and cook for 3-4 minutes per side, pressing gently with a spatula to ensure even melting and browning.
