# Ingredients:

01 - 1 cup fresh spinach, chopped
02 - 1 small tomato, diced
03 - 1/4 cup red onion, thinly sliced
04 - 1/2 cup shredded mozzarella cheese
05 - 1/2 cup crumbled feta cheese
06 - 1/4 teaspoon ground black pepper

# Steps:

01 - In a mixing bowl, combine chopped spinach, diced tomato, sliced red onion, shredded mozzarella, crumbled feta, and ground black pepper. Mix thoroughly until evenly distributed.
02 - Lay one tortilla flat and place one-fourth of the filling mixture over one half of the tortilla. Fold the tortilla in half to encase the filling.
03 - Heat a large skillet or griddle over medium heat and add olive oil. When the oil is hot, place the folded tortilla in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.
04 - Remove the quesadilla from the skillet, cool briefly, then cut into wedges and serve warm.
