Mediterranean Tzatziki Chicken Salad (Printable Version)

Refreshing Greek-inspired chicken with cucumber, yogurt, garlic and lemon - perfect for wraps, sandwiches or light meals.

# Ingredients:

→ Chicken

01 - 2 cups cooked chicken, shredded or diced (grilled, baked, or rotisserie)
02 - 1 tbsp olive oil
03 - 1 tsp dried oregano
04 - 1/2 tsp salt
05 - 1/2 tsp black pepper
06 - 1/2 tsp garlic powder

→ Tzatziki Dressing

07 - 1 cup Greek yogurt (full-fat or low-fat)
08 - 1/2 cup cucumber, finely grated and squeezed dry
09 - 1 tbsp olive oil
10 - 1 tbsp lemon juice
11 - 1 tsp red wine vinegar
12 - 1 clove garlic, minced
13 - 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
14 - 1/2 tsp salt
15 - 1/4 tsp black pepper

→ Mix-ins (Optional)

16 - 1/2 cup cherry tomatoes, halved
17 - 1/4 cup red onion, finely chopped
18 - 1/4 cup kalamata olives, sliced
19 - 1/4 cup feta cheese, crumbled

# Steps:

01 - If using raw chicken, season it with olive oil, oregano, garlic powder, salt, and pepper. Grill, bake, or pan-fry until fully cooked (internal temp 75°C). Let cool, then shred or dice the chicken. Skip this step if using rotisserie chicken!
02 - In a bowl, mix Greek yogurt, grated cucumber, olive oil, lemon juice, red wine vinegar, garlic, dill, salt, and pepper. Stir until smooth and creamy.
03 - In a large bowl, combine shredded chicken, cherry tomatoes, red onion, olives, and feta (if using). Pour the tzatziki dressing over the top and mix until well coated.
04 - Serve chilled or at room temperature. Enjoy in a lettuce wrap, pita, sandwich, or on its own as a salad.

# Notes:

01 - Make it extra creamy by adding 1 tbsp mayonnaise for a richer texture.
02 - For more crunch, toss in chopped bell peppers or sliced almonds.
03 - This recipe can be meal-prepped and stored in an airtight container in the fridge for 3–4 days.
