In a non-stick skillet over medium heat, cook the diced chicken sausage until browned completely.

Add liquid egg whites to the skillet with the sausage and scramble continuously until the mixture is fully set. Remove from heat and set aside.

Spray the skillet lightly again, place one corn tortilla in the pan, then add the egg and sausage mixture evenly on top, followed by shredded cheddar cheese.

Fold the tortilla in half and cook on medium heat, turning occasionally, until both sides are golden brown and crisp.
