Mini Breakfast Quesadillas (Printable Version)

01 - 2 small corn tortillas
02 - 120 ml liquid egg whites
03 - 2 lean chicken breakfast sausage links, diced
04 - 30 g reduced-fat shredded cheddar cheese
05 - Cooking spray

# Steps:

01 - In a non-stick skillet over medium heat, cook the diced chicken sausage until browned completely.
02 - Add liquid egg whites to the skillet with the sausage and scramble continuously until the mixture is fully set. Remove from heat and set aside.
03 - Spray the skillet lightly again, place one corn tortilla in the pan, then add the egg and sausage mixture evenly on top, followed by shredded cheddar cheese.
04 - Fold the tortilla in half and cook on medium heat, turning occasionally, until both sides are golden brown and crisp.
