One-Pot Smoky Chipotle Cheesy Chicken (Printable Version)

01 - 340 g penne or other short pasta
02 - 2 cups (about 300 g) cooked chicken, shredded or diced
03 - 3 cups (720 ml) chicken broth
04 - 1 cup (240 ml) heavy cream
05 - 1–2 chipotle peppers in adobo sauce, finely chopped
06 - 1 tablespoon adobo sauce (from chipotle can)
07 - 1 small onion, chopped
08 - 3 cloves garlic, minced
09 - 2 cups (200 g) shredded cheddar cheese
10 - 1 tablespoon olive oil or butter
11 - Salt, to taste
12 - Black pepper, to taste

# Steps:

01 - Heat olive oil or butter in a large pot or deep skillet over medium heat. Add chopped onion and minced garlic; sauté until softened and fragrant, about 2–3 minutes.
02 - Add cooked chicken, chipotle peppers, and adobo sauce to the pot. Stir to evenly coat the meat and aromatics with the smoky mixture.
03 - Pour in chicken broth and heavy cream. Mix to combine all ingredients thoroughly.
04 - Stir in the uncooked pasta. Bring the mixture to a gentle simmer, cover, and cook for 10–12 minutes, stirring occasionally, until pasta is al dente and most liquid has been absorbed.
05 - Reduce heat to low. Add shredded cheddar cheese and stir until smooth and creamy.
06 - Taste and adjust seasoning with salt, pepper, or additional adobo sauce as desired. Allow the pasta to rest, uncovered, for 2–3 minutes to slightly thicken before serving.
