Sweet Spicy Mango Dressing (Printable Version)

# Ingredients:

01 - 1 ripe Ataulfo mango, peeled and diced
02 - 30 ml fresh lime juice
03 - 15 ml fresh orange juice

→ Herbs and Spices

04 - 15 g fresh cilantro, finely chopped
05 - 1 small garlic clove, minced
06 - 1 g ground cumin
07 - 10 g fresh Fresno chili or jalapeño, minced, to taste

→ Oils and Sweeteners

08 - 30 ml extra virgin olive oil
09 - 15 g raw local honey

# Steps:

01 - Slice mango cheeks from the pit, score flesh in a crosshatch pattern without piercing the skin, invert, and remove cubes. Reserve remaining flesh near the pit.
02 - Combine mango chunks, lime juice, orange juice, honey, minced garlic, and ground cumin in a blender. Blend until completely smooth, then adjust sweetness if necessary.
03 - With blender running on low speed, slowly drizzle in olive oil until the dressing becomes creamy and slightly thickened.
04 - Transfer mixture to a bowl, fold in finely chopped cilantro and minced chili to taste. Let rest for 10 minutes to allow flavors to meld.
