# Ingredients:

→ Fish

01 - 4 center-cut fresh salmon fillets (approx. 170g each), skin-on

→ Spice Blend

02 - 30 ml olive oil
03 - 2.5 g garlic powder
04 - 2.5 g onion powder
05 - 5 g paprika
06 - 2 g dried oregano
07 - 1 g cayenne pepper

→ Finishing

08 - 15 ml fresh lemon juice
09 - 5 g fresh parsley, chopped

# Steps:

01 - Set oven to 200°C and allow it to reach full temperature before cooking the salmon.
02 - Combine olive oil with garlic powder, onion powder, paprika, dried oregano, and cayenne pepper in a small bowl. Mix until a smooth, even paste forms.
03 - Pat salmon fillets completely dry with paper towels to remove excess moisture and promote proper roasting.
04 - Brush the spice paste evenly over each fillet, covering top and sides to ensure full flavor penetration.
05 - Squeeze fresh lemon juice directly over the seasoned salmon to enhance flavor and tenderize the fish.
06 - Place fillets on a parchment-lined baking sheet and bake on the middle oven rack for 12 to 15 minutes, depending on thickness, until salmon is just firm with a slightly translucent center.
07 - Remove from oven and let fillets rest undisturbed for 3 to 5 minutes to allow juices to redistribute and ensure moistness.
08 - Sprinkle chopped fresh parsley over fillets and serve with optional lemon wedges for added brightness.

# Notes:

01 - To prevent overcooking, remove salmon when the center registers 52°C (125°F) for medium rare or 54°C (130°F) for medium. Residual heat will finish cooking during resting.
02 - Bring salmon to room temperature for 15 minutes before cooking for even heat distribution.
03 - Leftover salmon is excellent for salads or light meals the following day.
