# Steps:

01 - Peel and dice sweet potatoes into uniform 1.25 cm cubes to ensure even cooking. Complete this step immediately before cooking to prevent oxidation.
02 - Heat olive or avocado oil in a large skillet over medium heat until shimmering. Add diced onion and bell pepper, cooking for 5 to 7 minutes until onions turn translucent and peppers soften, stirring occasionally.
03 - Incorporate minced garlic, dried thyme, rosemary, and smoked paprika into the skillet. Stir continuously and cook for exactly one minute to avoid garlic burning and to bloom the spices.
04 - Add diced sweet potatoes to the skillet and stir thoroughly to coat with aromatics and spices. Season immediately with approximately 0.5 tsp salt and 0.25 tsp black pepper.
05 - Cover skillet and reduce heat to medium-low. Cook for 15 to 20 minutes, stirring occasionally to prevent sticking. Sweet potatoes are ready when easily pierced with a fork yet retain shape. Add water or broth (15-30 ml) if pan becomes dry.
06 - Add diced or shredded cooked beef to the skillet. Gently fold into the mixture and warm through over medium heat for 3 to 4 minutes without breaking the sweet potatoes.
07 - Increase heat to medium-high and cook uncovered for 5 to 7 minutes, stirring occasionally to create lightly browned, crispy edges on beef and sweet potatoes.
08 - Remove from heat, taste, and adjust seasoning with additional salt, pepper, or smoked paprika as needed. Serve immediately topped with optional garnishes such as fresh herbs, fried egg, avocado, or hot sauce.
