Broiled Salmon Cherry Tomatoes (Printable Version)

Quick broiled salmon with cherry tomatoes, lemon zest, and a savory Worcestershire glaze.

# Ingredients:

→ Protein

01 - 4 center-cut salmon fillets, 170-180 g each

→ Vegetables

02 - 300 g mixed cherry tomatoes

→ Seasonings and Oils

03 - 1 tsp garlic powder
04 - 1 tbsp Worcestershire sauce
05 - Zest of 1 lemon
06 - Juice of ½ lemon, plus wedges for serving
07 - Salt, to taste
08 - Ground black pepper, to taste
09 - Olive oil, a few teaspoons

10 - Fresh dill, optional

# Steps:

01 - Preheat the oven to broil and position the rack just above the middle level. Line a rimmed baking sheet with parchment paper and set aside.
02 - Pat salmon fillets dry with paper towels. Generously season both sides with salt, pepper, and garlic powder.
03 - In a small bowl, combine Worcestershire sauce and lemon juice, stirring well.
04 - Place cherry tomatoes on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
05 - Nestle salmon fillets among the tomatoes on the baking sheet. Spoon the marinade evenly over the salmon and finish by sprinkling the lemon zest on top.
06 - Broil in the preheated oven for 8 to 10 minutes, until the salmon is cooked through, lightly golden on top, and the tomatoes begin to burst.
07 - Remove from oven, garnish with fresh dill if desired, and serve with lemon wedges for squeezing. Enjoy immediately.
