Peas With Mint And Parsley (Printable Version)

# Ingredients:

01 - 340 grams frozen peas
02 - 28 millilitres unsalted butter or extra virgin olive oil
03 - 1 small clove garlic, minced
04 - 0.5 teaspoon crushed red pepper flakes
05 - 2 tablespoons fresh mint, chopped
06 - 2 tablespoons fresh parsley, chopped
07 - 15 millilitres fresh lemon juice
08 - Salt, to taste
09 - Freshly ground black pepper, to taste

# Steps:

01 - Bring a medium pot of water to a boil. Add the peas and cook for 2–3 minutes until just tender. Drain thoroughly.
02 - In the same pot, melt the butter over medium heat. Add garlic and crushed red pepper flakes. Sauté for 1 minute, stirring constantly to avoid burning.
03 - Return peas to the pot. Add chopped fresh mint and parsley. Season with salt and freshly ground black pepper.
04 - Lightly mash peas with a fork for a chunky consistency, mixing herbs through.
05 - Stir in lemon juice. Taste and adjust seasoning if necessary. Garnish with additional herbs and serve warm.

02 - For a dairy-free version, substitute butter with olive oil or a plant-based alternative.
